You have to be a fan of coconut to enjoy this tasty candy, which I am! I have always loved Almond Joy and Mounds candy bars so I set out to create a Veggie Kids version. This is one of my new favorites for when I'm craving something sweet. These cute desserts are a breeze to make and are great for kid chefs!
Almond Coconut Candy (Vegan)
makes about 15 pieces
2 C. unsweetened, shredded coconut
1/3 C. brown rice syrup or agave nectar
15 whole, raw almonds
3/4 C. vegan chocolate chips, melted
1 Tb. Earth Balance Organic Coconut Spread, melted*
Either in a mixing bowl with a spoon or in a food processor, blend together coconut and brown rice syrup until it's one big clump and the coconut is completely moist with the syrup.
Prepare a baking sheet by lining it with waxed paper or parchment paper.
Take 1 tablespoon of coconut mixture and form an oval. Place it on the baking sheet and put one almond in the center of it.
Melt the chocolate chips and coconut spread in a bowl in the microwave or on the stove (being careful not to burn!) and whisk together until completely smooth.
Drizzle each coconut oval with chocolate sauce until evenly coated and smooth.
Refrigerate for about 10-15 minutes or until firm.
Store in the 'fridge...if they last that long!
*You could also use virgin coconut oil, melted

These wouldn't last 5 minutes in my house. I'd eat them before the chocolate had time to set. I have to look away now. Look away!
