Eating a vegan diet can mean having to sacrifice sinful comfort foods and treats, right?

Well not this time!  Ilsa Hess has come up with a solution to that problem!  
Ooey, gooey, cheesiness is the best way to describe Nacheez.   But if you're looking for the real description, it's a non-dairy nacho style "cheese" made from raw cashews and red bell peppers (hello healthy!).  This stuff could actually be considered a health food!

Ilsa Hess created Nacheez when she was craving the kind of processed nacho cheese that comes in a pump we're all familiar with.  She decided to stick to her vegan ways and create her own version.  After many variations, Ilsa finally came up with a  recipe she loved.  Hence, Nacheez was born!  Her company, Love & Joy Foods, is working on more delicious vegan products too.

Here's one of Ilsa's tasty recipes using Nacheez.  This one's great for any party.  Or to fool a non-vegan into thinking they're getting something naughty!

makes 8 adult servings

  • 1 bag corn chips
  • 8 Oz.s vegan sour cream
  • 1 lime
  • 16 Oz.s refried beans
  • 1 2-pack of air-sealed guacamole Use both packs
  • 1 jar Mild or Spicy Nacheez
  • 16 Oz.s red salsa
  • 3 Oz.s sliced black olives

Optional Toppings:

  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped white onions
  • 1/2 cup shredded lettuce
Stir in the juice of 1 lime to the sour cream.
In a shallow glass baking dish, spread a layer of refried beans, a
layer of guacamole, a layer of sour cream, a layer Nacheez, and a
layer of red salsa. Sprinkle on the olives and any optional toppings.
Serve with corn chips.

And might I just add, based on my own opinion, this stuff is super delicious!  My kids, husband and I all devoured a jar in no time flat.  (I like the mild version because I'm a wimp when it comes to heat.)  We ate it over chips but I'm eager to try it over pasta for the easiest vegan mac'n cheese ever!  
I also think dipping veggies into it is one of the best ideas I've heard!
